  • গরম মশলা গুঁড়ো ১ চা-চামচ
  • ঘি ১ চা-চামচ

কিভাবে বানাতে হবে?

জল ঝরানো ছানাকে ভালো করে মাখতে হবে উপকরণগুলো দিয়ে।ভালো করে মেখে ছোট ছোট বল বানান।হাতের তালুতে রেখে আলতো চেপে খানিকটা চ্যাপ্টা আকার দিন।দেখতে অনেকটা ফুলে উঠা লুচির মতো হবে।রান্নাটা কিন্তু হবে সরষের তেলে।আলুটা ভালো করে জল ছাড়িয়ে আগে থেকে আধ সেদ্ধ করে রাখতে হবে।ছানার বলগুলো সরষের তেলে ভেজে নিন।বাদামি রঙ হলেই নামিয়ে নেবেন।ভাজতে হবে মধ্যম আঁচে।আধ সেদ্ধ আলু এবার ঐ তেলেই ভেজে তুলুন।এবার সেই তেলে ফোড়ন দিন জিরা,শুকনো লঙ্কা,তেজপাতা দিয়ে।ছোট আকারের বাটিতে জিরে,হলুদ,লঙ্কা গুঁড়ো নিয়ে ২ চামচ জল দিয়ে ভালো করে গুলে নিন।বেশি জল দেবেন না।মিশ্রণটা যেন মাখা মাখা হয়।ফোড়ন দেওয়ার পর আঁচটা কমিয়ে দিন।মশলার মিশ্রণটা কড়াইয়ে ঢেলে হালকা আঁচে ভাজতে হবে।যখন মশলার গা থেকে তেল ছাড়তে শুরু করবে তখন আগে থেকে ভেজে রাখা আলু তাতে দিন।তারপর অল্প জল দিয়ে নুন,চিনি আন্দাজমতো দিয়ে কিছুক্ষণ ফোটান।এবার আগে থেকে ভেজে রাখা ছানার বলগুলো তাতে দিন।কিছুক্ষণ ফুটিয়ে ঘি এবং গরম মশলা দিয়ে নামিয়ে নিন।
